Cucumber and Tomato Salad Recipe

Cucumber and tomato salad will add some flavor to your veggies and is a refreshing and tasty treat. You can have it with your choice of protein as your vegetable or as a snack in between your meals.

The apple cider vinegar will also help to detox any excess fluid you might be retaining. Make sure you are using Morton Lite salt as it will help with reducing water retention compared to other table salts.

Ingredients:

1 cup thinly sliced cucumbers
3/4 cup apple cider vinegar
1 teaspoon fresh dill leaves minced
1/4 teaspoon Morton lite salt
1/2 to 3/4 cup cherry tomatoes or roma tomatoes wedged
1 pinch black pepper
3/4 cup water
1/4 to 1/2 cup stevia white sugar

Optional -

1 red or yellow bell pepper sliced
1 purple onion sliced

Mix everything together in a bowl and let sit in the refrigerator for an hour.
